Oh friends, you have no idea, NO IDEA how many kinds of delightful this dip is. It is nothing short of a party in your mouth. Get after it. Guaca-Salsa Dip 1-2 tablespoons extra-virgin olive oil 1 jalapeno pepper, seeded and finely chopped ½ medium onion, chopped finely 1 clove garlic, chopped finely Coarse salt and crushed black pepper 2 firm Haas avocados 3 plum/Roma tomatoes, seeded and chopped Handful cilantro leaves, chopped finely Juice of 1 lime Halve and separate the avocados. Remove pit with a spoon. With the skin in tact, using a small knife, dice the avocado while still in the skin. Scoop out the diced flesh and place in a bowl. Combine tomatoes, remaining onions, jalapenos, and cilantro gently with avocado and dress the salad with the juice of 1 lime, extra-virgin olive oil, and salt and pepper, to your taste. Cindy’s Note: I de-seed my jalapeno because I am a wimp when it comes to the heat. I also use red onions instead of yellow or white because they have a better flavor.
